Healthy Jicama Fries


Holy jicama [hick-ah-mah]! I'm completely in love with this root vegetable and you will be too once you see how easy it is to make healthy french fries with it!

Jicama is a root vegetable similar in color to a parsnip with a brown outer skin. You can eat it raw or cooked and it has crisp and crunchy texture. Great addition to a raw veggie platter with dips OR check this recipe out:

Jicama Fries (serves 2)

Ingredients:

  • 1 medium sized jicama

  • 1/2 lime

  • 1-2 Tablespoons EVOO

  • Salt and pepper

Instructions:

  1. Preheat the oven to 425 degrees.

  2. Trim ends off jicama and peel, then cut into about 1/2" thick fries (or whatever size you prefer!). Place in a bowl.

  3. Drizzle jicama with EVOO.

  4. Zest lime over jicama and season with salt and pepper, squeeze lime juice over jicama.

  5. Toss to combine.

  6. Spread jicama out in a single layer on a baking sheet and roast for 15 minutes, or until lightly browned and crispy.

Get creative with your seasonings! I really enjoyed this version from Green Chef, but you can add any flavors you like. The baking process is the same.

Enjoy as a snack or as a side with dinner! They pair amazingly with a burger (I had some with a black bean burger the other night, pictured above - AMAZING!). They also taste great dipped in guacamole :)
