The Elixir That Changed My Mornings


This elixir was my favorite recipe during my first season at Dig In. I was having trouble finding quick and easy breakfast options that gave me enough energy to get through the morning. The first time I tried it, not only was I psyched about how delicious it was, but it kept me going until lunchtime with no crash.

The secret? Chia seeds. The chia seed is an ancient seed used by the Aztecs and the Mayans back in the day for the sustainable energy they provided. In fact, “chia” is the ancient Mayan word for “strength.” These tiny little guys are packed with nutrients and are an excellent source of fiber, fat (Omega-3s!), and calcium.

Try it out!

Cashew Elixir

Makes 4-5 cups

Ingredients:

  • 1 cup cashews, soaked for at least 2 hours and rinsed

  • 3 or 4 organic Medjool dates

  • 4 cups water

  • 1 teaspoon vanilla extract (or almond extract)

  • 1 pinch cinnamon

  • 3 tablespoons chia seeds

Instructions:

  • Blend all ingredients, except chia seeds, in blender until smooth (1-2 minutes).

  • Pour into large glass jar and add chia seeds.

  • Shake and chill in refrigerator (will store up to 4 days).

Usually, I’ll make 2 batches: One with chia seeds and one without. I’ll use the chia elixir for breakfast or an on-the-go snack and I love to use the plain nut-milk for cooking and smoothies. Plus, it’s quicker than almond milk since you don’t have to strain out the nut meal. Just blend and enjoy!
