This spring salad is all about balance. It has it all! Sweet juicy blueberries, salty creamy feta, leafy greens, crunchy onions and almonds... And the flavor isn't the only thing that's balanced. Check out the health benefits:
Blueberries: antioxidants, vitamin C, fiber
Spinach: protein, iron, calcium, vitamins A & C
Feta: fat, protein
Almonds: fat, protein
Onions: anti-microbial, cancer-fighting
Lemon: alkaline, vitamin C
EVOO: more healthy fat!
BLUEBERRY, SPINACH & FETA SALAD
6 cups spinach
1 cup blueberries
4 oz. crumbled feta
1/4 cup raw almonds
sliced red onion, to taste
Pinch of sea salt
Layer first 5 ingredients in a large bowl, toss to combine.
Add equal parts EVOO, vinegar and lemon juice, to taste.
Sprinkle sea salt on top.
Toss to combine.
