Sesame Egg Drop Soup with Kale

This is the perfect recipe for when you're fighting those pesky winter bugs and you just want something nourishing to sip on and make you feel allll better. :)
Sesame Egg Drop Soup with Kale
Serves 4
Ingredients:
4 cups chicken or veggie stock (preferably homemade!)
2 cups kale, chopped
1/2 t toasted sesame oil
2 eggs, well beaten
1/4 cup scallions, chopped
salt to taste
Instructions:
Bring stock to a rolling boil in soup pot.
Add kale, sesame oil and salt. Simmer until kale wilts (about 5 minutes).
Create a whirl pool in the pot with a spoon. Then slowly pour the eggs into the pot, stirring to create flowery egg ribbons.
Add scallions and more salt if desired. Serve immediately.
